Butterbur, sweet coltsfoot. About 15 species of spreading perennials of the N Hemisphere. Cultivated as ornamentals, or, in the case of the following species, for its edible uses.
A fairyland foliage plant whose edible stalks reach 6′ tall and whose umbrella-like basal leaves spread 5′ across. In early spring, white flower clusters appear before the leaves as though from an entirely different plant species. Vigorous in moist, rich soil with partial shade.
