Brings forth an abundance of bright yellow flowers 2 - 3" across in summer and early fall. Flowers are somewhat chocolate-scented. Often cultivated for its large, tuberous roots, which are edible and nutritious. Once a patch is established, some roots can be dug each year at any time when the plant is dormant. It has been our experience that the roots are more flavorful in spring than they are in fall. When grown in good soil with a steady moisture supply, Jerusalem artichoke plants spread energetically and yield large crops of tubers. We offer the following selections of Helianthus tuberosus. Their flowering time varies, so the flowering season can be extended by planting different selections. Selections may be mixed to obtain quantity rates. ONE UNIT = THREE PLANTS.

NEW '99 Height to 10' or more, very late flowering. Bears abundant crops of large, relatively smooth tubers. Probably the best selection we list for tuber production. Not actually a new selection for us, we had grown this selection at TBF for many years until losing the variety a few years ago. We were very pleased, therefore, to learn recently of a thriving patch in the garden of our artist, Betty Schaffer.
